Shaved Cauliflower Salad with Garlic Yogurt

For the Salad
 ¼ head cauliflower shaved or 1 1/2 c
 ¼ cup red onion, shaved
 2 radish, fine julienne
 2 tbsp parsley
 1 cup baby arugula
 2 tbsp parmesan
 salt and pepper to finish
For the Dressing
 1 cup greek yogurt
 1 juice of one lemon
 1 tbsp basil, chopped
 1 tsp thyme, chopped
 2 anchovy fillets, fine chopped
 1 tbsp Worcestershire
 2 tbsp olive oil
 1 tbsp dijon mustard
 2 tbsp red wine vinegar
 ¼ cup parmesan, grated
 salt and pepper to taste
For the Salad

On a mandolin shave raw cauliflower and transfer to a bowl. Shave red onion and add to the bowl with the cauliflower. Shave radish on mandolin and julienne with a knife add to bowl as well. Pick parsley leaves and add to the salad. Add baby arugula and set aside.

For the Dressing

In a medium bowl, add all the ingredients to and mix until all combined. Should be the consistency of thin ranch. If its too thick, add a couple tbs of water.

Put it Together

Add a couple tablespoons of dressing at a time and lightly toss it until the cauliflower and arugula have a light shine of dressing. Finish by shaving parmesan over the top and drizzle with olive oil. Season with salt and pepper.
