When my Logan was a small lad he loved to eat everything! I was a first time mom so I was obsessed with making his meals. Sometimes I was so extra guys. (Somewhere along the way he became super picky). I’m smirking just thinking about it. I loved making risotto and lentils and salmon. I mean, I was crazy. So every year for his birthday I would make him Chili con Carne Mac. His birthday version was a little different than this recipe. The vintage recipe was chili con carne and macaroni & cheese on the side. We would then mix it together ourselves. This is a hybrid recipe. This time I made a huge batch of chili and added the pasta toward the end of the cooking. Topped it with cheese, sour cream and chives. Droolingggg!
When I think of fall, I think warm soups, stews and all the cinnamon and cardamom. This stew reminds me of just that. It reminds me of Logan as a little dude running around and getting into trouble. It reminds me of crisp weather, where the days were beautiful but cold. This recipe if perfect to cuddle up with on the couch to binge watch some Netflix. It’s just plain cozy guys!
