I know it’s still too summer for stew but hear me out here. It’s comfort food disguised as a tangy salsa with tender juicy beef pieces. Top it with some crunchy raw veg and there you go. Not so summery right? I mean lets be honest here, what excuse does pumpkin spice have? People are literally clawing at the doors for it. I’m not having it!
Carne en su jugo is a dish Mexican moms throw down on a weeknight. It’s a set it and forget it type of dish. One pot situation. And if you ask me, theres nothing better than not having a sink full of pots and pans am I right?!? Guys, I ate so 90% of this stew and it makes a good portion. I added the two Serranos the recipe calls for and the chiles were not very spicy so that was nice but I do advise if you don not enjoy spice just completely omit the chilis. I hope you guys try this, I promise its so bomb with some tortillas on the side to scoop up the juices. Don’t forget the avocado!! Enjoy!
