When I was initially planning this post, I was going in a whole other direction and after a quick brainstorm, a salad it was. I went with what I had around the kitchen but I also wanted to make something hearty and fresh. It was so good guys. I made it a couple hours ago and it was gone before dinner!
So this salad is pretty much all the items that go well with smoked fish but in pasta salad form, I mean c’mon! Pistou is typically used as a sauce but I decided to use it as the dressing. It’s crunchy and herbaceous which you guys know I love. The pistou can be made with dried herbs if you can’t find the herbs fresh but it will have a bit of a different depth. I hope you guys enjoy this one because we sure did!
