In an attempt to be healthy, I bought a giant cauliflower. I’ve come to that point in my life where I try to use it as a carb substitute when I can. Cauliflower’s having a moment ya know? Well, here I am with this massive white vegetable in my fridge staring at me each time I open the door and every time I manage to sneak away before it notices. It finally got me. So, I put together this bitter- tangy salad. Raw cauliflower has a bit of a bite and I paired it with some baby arugula which has a pepperiness to it and the garlic yogurt has some tang. It’s an assertive salad and would be a great side to any protein. I think chicken, shrimp or salmon would be lovely with this as a side or even an entree. You know I love easy and this salad would be great to take to a bbq or on a picnic. Enjoy guys!
