After a long break from the blog and making some adjustments I’m finally back to adding content. It feels good I must say. San Antonio has had some really nice weather, reminiscent of LA; cool sunny mornings that burn off in the afternoon. But in true San Antonio fashion, its all over the place. Today marks the first official day of spring break and the kids couldn’t be happier.
I have some fun stuff lined up for the next two weeks for you guys. I’m thinking about doing an adult beverage every week as well as some Mexican inspired recipes. Let me know what you guys think. Either way it will all be yummy and festive! So Since St. Patty’s is right around the corner I thought I’d start there.
We’re not really a huge St. Patty’s Day family but the kids always do St. Patty’s at school or day care. This year I was thinking about making a themed treat for Logan’s class but then I quickly realized it was spring break (DOH!). So I thought I’d try an make things a little festive at home and make some St. Patty’s Day themed pancakes. My kids love pancakes! As I’m sure most kids do. My kids are also very finicky eaters (go figure!) so I knew I had to keep it fun and colorful to keep them interested. Behold cereal pancakes! They are as yummy as they look y’all! They’re borderline Funfetti-ish. You can play with the color on the actual pancakes themselves if you don’t want to do green and you can call them unicorn pancakes… either way, they’re delish! I decided to do a cream cheese glaze instead of plain glaze to soften the sweetness a bit. I added some whipped cream at the end because who doesn’t love whipped cream. I also found some edible gold star sprinkles.
